Dropdowns are good at capturing where and how long, and hopeless at capturing the thing you actually care about. Nobody has ever had a preference that fits neatly in a select box.

It reads the note properly
"Lots of street food and a rooftop bar each night" changes the plan. So does "we're slow in the mornings", or "no seafood, one of us is allergic". The note is read for what you want, what to avoid, dietary needs and who's coming — and those shape the itinerary rather than sitting in a box nobody looks at.
Restaurants can be saved now
Asking the bear to save a restaurant used to fail outright. Restaurants now save to your bucket list like anywhere else. Hotels still can't be saved — the assistant will offer to add one to your trip's bookings instead of pretending otherwise.
